St George Distillery are the original craft distillers. The spirits they make are considered by many to be the finest coming out of California. In America absinthe was banned from being sold, but not distilled, so these guys spent 11 years perfecting the recipe to create this absinthe. As soon as the ban was lifted they were the first to sell their spirit. The art in absinthe is to create harmony in flavours, as the flavours are so big that creating something like an absinthe is a true test of a distiller. Using a brandy base, then distilling with wormwood, fennel and star anise. It then goes into a secondary infusion with 6 other botanicals. This is where the absinthes gets it colour from. The bright green turns into a feuille morte (dead leaf) hue as the chlorophyll breaks down. This is best enjoyed in a cocktail or mixed with water and ice. On the nose it has crisp anise and heady floral notes. Sweet, refreshing lemon. The palate has a core wormwood, earthy hyssop and fennel on the mid palate. Anise throughout. The finish is long and with anise and bitter herbs.
