Curry powders are an important part of African cooking due to the heavy influence of Arabic and Indian cuisine in Africa. Curry powders are made from different proportions of spices, dried and ground. African curry can be done with chicken, shrimp, or crab. It also goes well with tomato chutney and onion hot sauce.
Red and Green Beans African Curry
Yield: 5 servings
Ingredients:
2/3 cup dry small red beans or 1 can red kidney beans
1 lb frozen green beans, cut
1 large onion, chopped fine
4 tbsp olive oil
3 large garlic cloves, chopped fine
2 large fresh tomatoes, chopped
1 tsp fresh ginger diced
2 tsp tomato paste
2 tsp African Curry
tsp salt (add more if needed)
tsp ground black pepper
3 whole bay leaves
tsp coriander, ground
tsp turmeric, ground
tsp cumin, ground
2 tsp fresh lemon juice
2 tbsp fresh cilantro leaves, chopped fine
2 cups water or vegetable broth
Cooks note:
If you choose to make this recipe with the dry red beans please make sure to soak them in water for a few hours and use a pressure cooker to cook them for about 20 minutes in water (to soften the beans and reduce the cooking time of the dish). Strain the water and set aside to cool. If you choose to use the can kidney beans you might need to use less water.
In a large skillet over high heat add the olive oil and saut chopped onion until golden brown (about 15 minutes). Add chopped garlic and fresh tomatoes; saut for about 8 minutes until tomatoes are soft. Add tomato paste, fresh ginger and the following spices: African curry, salt, ground black pepper, bay leaves, coriander, turmeric; mix well for few minutes. Add red beans and frozen green beans; mix until it is covered with the spices and tomatoes mix. Add fresh cilantro, lemon juice, and 1 cup of water; reduce the heat to medium cover and cook for about 15 minutes. Add one more cup of water and cook for about 20 more minutes. Add the last cup of water and cook for another 15 minutes. Make sure to mix ingredients each time you add water. Make sure to add water gradually and taste and season more to adjust seasoning if needed.
Serve over plain rice or with flat bread.
