Using the base of the Chairman’s Reserve Rum Original, this is then infused with Caribbean spices, which include cinnamon, clove, nutmeg, vanilla, coconut, allspice, lemon and orange, plus an extract of a local wood that is believed to have aphrodisiac qualities. The infusion takes place in the last 6 months of maturation. A Christmas cake-like nose with mandarin orange, apricot and baking spices. A sweet palate of vanilla, gingerbread, cinnamon, clove and nutmeg, but all nicely balanced with citrus acidity. The finish is spiced with coconut and ginger. This rum can be used like any other rum, but it will add an extra dimension of sweet/spiced flavours.
