Hailing from the small Caribbean island of St Lucia, this rum, although clear, has been aged. It has spent 2-3 years in ex-bourbon barrels and then charcoal filtered. The rum is a mxture of aged and unaged pot and column still distillates. On the nose, toasted marshmallow, banana bread and confectioner’s sugar. A dry palate with notes of lime, coconut and grilled pineapple. Long lingering finish that is dry and off-sweet. Use in any rum cocktail!
