Hillrock grows all the grain used in their whiskeys on their farm and processes the malt in their own malthouse, the first distillery to do both since BEFORE Prohibition.

Hillrock Solera Aged Bourbon is the first American whiskey to be aged in the centuries-old Solera method, used traditionally to create exceptional Sherries, Ports, Madeiras, and Cognacs. Recognized internationally, the award-winning whiskey is finished in 20 year old Oloroso Sherry casks which give the Bourbon floral notes layered with fig, roasted walnuts, candied fruit and spicy rye. Solera aging involves a pyramid of barrels where a small portion of whiskey is removed periodically from the lowest tier of barrels and an equal measure of new whiskey is added to the top barrels. No barrel in the Solera is ever emptied, and over time, the older whiskey in the
Solera mingles with younger whiskies to create unmatched depth and complexity.
Tasting Notes:
Nose: Cinnamon along with oaked caramel-vanilla and floral, fruit notes comprise the
nose of this golden amber bourbon.
Palate: Sweet, yet spicy full-bodied flavors of maple syrup, brown sugar,
molasses, toffee, roasted corn, and raisin notes on the palate are balanced by spicy notes of clove and cinnamon.
Finish: The warm finish abounds with sweet caramel and butterscotch. Familiar Oloroso sherry undertones of walnut, fig and candied fruit balance the spicy rye undertones.

Look for peach and vanilla aromas, bold raisin and brown sugar flavors and a gentle exit that just hints at Sherry. At nearly 93 proof, the alcohol makes its presence known, so add some water or vermouth if you must.”
