Hillrock grows all the grain used in their whiskeys on their farm and processes the malt in their own malthouse, the first distillery to do both since BEFORE Prohibition.
Notes from the Distillery:
Hillrock Double Cask Rye is an unique American whiskey, handcrafted in small batches from eye grain, which has been naturally grown, milled, small batch pot distilled, aged, and bottled by hand all on our Hudson Valley Estate. After aging in new #3 char American oak casks, the award winning Field-to-Glass whiskey is then aged in #4 char new American oak casks which add layers of caramel and vanilla to complement traditional rye spice.
Tasting Notes:
Nose: Highlighted by warm and inviting aromas of vanilla and caramel with hints of prune, apricot and rye spice which round out the nose.

Palate: Initial caramel sweetness on the palate is followed by mint, clove, and cinnamon spices
